TTD: Tempeh Tomato Daiya

Today's lunch was pretty simple, and full of flavour! I made a Vegan Grilled Cheese. Well, I cooked it in the broiler, but still super yummy!

Mexicali Sliders

Tonight's dinner was Chloe Coscarelli's Mexicali Sliders. I made these a couple of weeks ago, but only made the patties. Tonight, I actually made the Sliders with the Spicy Mango Sauce too. It was amazing. Adding the Mango Sauce added another level of YUM to these Sliders!

Pumpkin Spiced Latte Cupcakes with Cream Cheese Buttercream and Pumpkin Syrup

I love all things Pumpkin Pie and I love Soy Lattes. So I created a cupcake in tribute to one of my favourite desserts and my favourite coffee drink. :)

Yes, these are 100% Vegan!!

Gluten-Free Peanut Butter Cookies

Last night, I made a batch of Gluten-Free Peanut Butter Cookies. I was a little worried because it's actually a flourless cookie. I have never made a flourless cookie before, but they turned out amazing. Crispy, but not tough. Mmm...  :)

Roasted Potato Salad with Feta and Peas

Tonight's dinner was a simple easy meal. I made spaghetti and meat sauce, but to jazz it up a bit. I made a Roasted Potato Salad with Feta and Peas, as our side, another recipe from Donna Hay. This time the recipe is from Fast, Fresh, Simple. This is my favourite Donna Hay cookbook. I have cooked a handful of the recipes and all of them have turned out amazing. Most of the recipes are super quick, with very little prep work. An excellent resource, if you are hard pressed for time but still want a amazing meal. :)

Mexican Hot Chocolate Snickerdoodles

Today, I tested another cookie recipe for my cookie boxes. Yes, it was another vegan cookie. Yes, it was another success! :)

Baked Miso-Ginger Chicken with Ginger Snow Pea Salad

Today, I made to wonder dishes from Donna Hay's cookbooks. I love Donna Hay's cookbooks. They are the epitome of food porn. Every one of her books have great recipes and amazing photos. I have been slowly add to my collection. This recipe comes from her cookbook: No Time to Cook.

Baked Vegan Spring Rolls

For some reason, I never sleep until it's wwwaaaayyyy past my bedtime, then I wake up grumpy and cranky. Hmm...I think there is a reason for it. I just can't put my finger on it. LOL!!

Well, with me up so late every night, dinner at 6 PM doesn't keep me full until breakfast time. I always seem to have a craving of some sort of snack at 1 AM. Tonight, it was spring rolls. I made some super quick BAKED not FRIED spring rolls.

They were crispy not soggy and very yummy! :)

Pad Thai with Tom Yum Soup

Tonight's dinner was super simple and very yummy, especially with jarred sauces. I used Tom Yum Soup Paste by Por Kwan and Pad Thai Sauce by Pantai. Both you can find at your local Asian grocery store.

Mexicali Patties with Coconut Lime Quinoa

I love, LOVE Chloe Coscarelli! Ever since I saw her on Cupcake Wars. Yes, she was the smiley adorable one, who won with Vegan, yes that's right, Vegan cupcakes! She is who inspired to bake mostly vegan cupcakes and other treats. Since then, I have dabbled with vegan cuisine. You can see my blog is full of random recipes I have tired and thrown together. I have been trying to cook more vegetarian and vegan meals, ever since I saw Forks over Knives and now Earthlings. Both AMAZING documentary about food. Next on my list, are Black Gold and Vanishing of the Bees.

Anyway, back to Chloe. :) I have made many of her desserts and a few meals, but the Mexicali Sliders scared me the most. Mainly, because I was really worried it would be too dry. Well, I am pleased to announce it wasn't. It was delicious, just like all her other recipes. I did make a few minor changes. I made them gluten-free, for starters, skipped the Mango sauce and added my favourite vegan cheese, Daiya (in Pepperjack).

Vegan Oatmeal Cookies

Today, I made a batch of the most amazing Oatmeal Cookies! Yes, they were vegan. No, they were not rock hard. They were a little crispy on the outside and soft and chewy on the inside. My husband ate almost all of them in one sitting. He's a self-proclaimed "cookie connoisseur". He said they were"moreish". I think that's a good review. :)

On the Food Network's website, they are advertising the 12 Days of Cookies. I picked a few yummy ones that caught my eye. I'll be making my favourite recipes and posting them soon.

Pizza Night!

Tonight was Pizza night. We rarely order pizza anymore, since making it at home is so much fun and can use extra special ingredients like Gorgonzola cheese. Mmm...

I used a pre-made pizza dough for the first time. I usually make dough from scratch, but I came home kinda late. I purchased it from my local Metro store, and it was pretty good. There was enough to make 3 small pizzas. I always make small pizzas, rather then one large one, then everyone can have the toppings they one. It's kinda like a pizza buffet. Eat your heart out Pizza Hut!! *sticks out tongue* LOL!

Chicken Souvlaki Pizza

Vegetarian Pizza

Chicken and Mushroom Pizza

Surprisingly, the kids liked the Chicken Souvlaki pizza the best. I didn't think they would even touch it, because it didn't have tomato sauce on it.

Here is the list of toppings:

Chicken Souvlaki Pizza: Tzatziki sauce base, topped with Greek marinaded chicken, feta, marble cheese and a sprinkle of Greek spice blend.

Vegetarian Pizza: Crushed tomatoes with a sprinkle of Oregano, topped with lots and lots of mushrooms, feta cheese and marble cheese.

Chicken and Mushroom Pizza: Crushed tomatoes with a sprinkle of Oregano, topped with grilled chicken, mushrooms and marble cheese.

With toppings like these, who needs delivery?! Especially, when delivery takes 45 mins to an hour, depending on weather. Then, when it finally arrives, the pizza is lukewarm or the order it wrong! >.<

If you get a chance, why not experiment with your pizza toppings. You might find a new favourite.  :)

Happy Cooking!! :)

Onward to Christmas!!

Well, tomorrow will be the start of a new and final month of this year. I can't believe this year has flown by. It seems as though every year I get older, the years seem to fly by faster. There is not enough hours in the day to do everything on my daily to-do list. *sigh*

Christmas is coming up quick. I thought I was close to finished my Christmas shopping, but I always find myself totally stressed out a week before Christmas, frantically wondering if I have Christmas presents for everyone, are they all packed, wrapped and labeled. This year, there will be one more thing on my list: Baking. I have always admired my mother-in-law with all the baking she does every year. This year, I have decided to do some of my own baking. I haven't actually decided on what I am going to bake but I hope they all turn out. :)

Anyway, before Christmas I will be doing lots more cooking, but here are some of our lovely dinners. Hopefully, I'll have time to post recipes to these yummies soon. Yes, the little ones have been relentless. Everyday, Alyssa tells me it's Chirstmas. *sigh* I think she's excited or something! LOL! Needless to say, blogging has been put on the back burner.  :(

On the Road to a Vegan Thanksgiving - Part 2

Happy (belated) Thanksgiving to all my US friends! I wish you the most food and drink you have ever had. I hope you didn't forget to save room of dessert. :)

Last night, I celebrated with a Vegan Thanksgiving of my own. I had every intention on making Chloe Coscarelli' Harvest-Stuffed Protobello Mushrooms, but got lazy. I was running out of time. It was already nearly 6 PM and I hadn't even started dinner yet. (Yeah, I'm  a procrastinator!) So I changed it up a bit, but this was dinner:

Portobello Mushrooms stuffed with Cranberry stuffing served
with Sauteed Brussels Sprouts and "Bacon",
Mashed Potatoes and vegan gravy

On the Road to a Vegan Thanksgiving - Part 1

I have been working on recipes for a very Vegan Thanksgiving tomorrow. It's not really Thanksgiving, since I live in Canada. We celebrated in October with a Traditional Turkey and Baked Ham. Yes, it was yummy and I don't regret it. However, to redeem my holiday, I have decided to celebrate with my fellow American neighbours , with a vegan meal. :)

Today, I did some prep work. I decided to make one my desserts ahead of time, Four Ingredient Pumpkin Pie. Instead of an actual pie, I decided to make put them in little shot glasses and didn't bake them. Boy, were they good. Especially, topped with some coconut cream.

Slow Cooker Pasta Sauce

Over the weekend, I made two lasagnas for my husband. Since I had to make tons of pasta sauce, I thought it would be nice if I could just make it in the slow cooker. So I gave it a go...well, it turned out amazing!  I am so happy it did. Whenever I need to make a ton of pasta sauce, I will be throwing it all in the slow cooker and leaving. :)

My beloved Slow Cooker. It's huge - 7qt!! LOL!

Eggs Benedict

I have been craving a good Eggs Benedict for days now, but last time I made Eggs Benedict it was a disaster. I think I was trying to make breakfast for too many people (6) all at the same time. The eggs were cold, the Hollandaise sauce was lumpy and the toast go rock hard. Just thinking about it gives me the chills. :S

A couple of weeks ago, I found an easy Blender Hollandaise sauce. It's not traditional, but boy was it easy and  super yummy! With this sauce, I can make Hollandaise sauce everyday. Not that I would, very high in cholestrol, but I could. :)

Vegan Thanksgiving....kinda!

Recently, I have been in a cooking funk. I haven't been inspired to cook anything. In fact, I haven't really been craving anything either. Which is really weird, so I thought I was getting sick. Well, I'm not sick. Just uninspired....until today. :)

Thank goodness, I have crawled out of my funk - it's a cold, dark and foodless place. SCARY!! I have decided to have a Vegan Thanksgiving. I know Thanksgiving was in October, we'll it was for us Canadians. I guess I can  have it both ways - turkey in October and vegan in November. I'm starting to like the sound of this new Tradition. I shouldn't call it a Tradition yet, let's see how they like it.

Stay tuned for pictures and recipes from my upcoming adventure...My Vegan Thanksgiving! LOL!

Happy Cooking!! :)

What's the best family vacation destination in Canada?

Recently, I was asked what's the best family vacation destination in Canada. Well, we really haven't traveled anywhere since I had my youngest, Logan. We haven't really had the chance or the finances. :(

On the upside, we did  advantage of my in-laws cottage. For years, we have gone up to their cottage, just south of North Bay. It's beautiful up there. The air is cleaner, and the night sky is clearer. It's one of the few places were we ALL have to be disconnected, from TV (only 3 channels up there), Facebook, Twitter, and even cellphone service. There are a few "hotspots" where we can get cellphone reception, like beside the kitchen sink but only if you are standing on one foot with the phone close to the front door. Ok, it's not that bad, but still pretty bad. LOL!

Christmas is coming...

Today, I went to the mall with Logan. When I walked past one of the shops, I stopped. They were already playing CHRISTMAS CAROLS!! Are you kidding me!! It's not even the middle of November yet.

I really shouldn't talk, I have been Christmas shopping since the snow melted earlier this year. Honestly, I only have a few more gifts to pick up. But I was still shocked to hear the carols. The mall doesn't even have their Santa's Wonderland set up yet. Oh well, can't really stop it from coming. Can we?

Actually, I really like Christmas and the holiday, but I am a firm believer that it's a CHILDREN's holiday. Children should be spoiled, but us adults shouldn't have to stress over it. My kids are pretty easy with the gift giving. The little ones still like anything they can unwrap, it doesn't really matter what it is. Kat on the other hand, is Miss Technology. She loves her electronics. I really can't blame her either, both my husband and I are big techies as well. It just means her gift is usually something pretty extravagant. Since, she doesn't ask for much and she's an awesome kid throughout the year, it's worth it for us to treat her to something awesome once a year.

Since, it's really kicked in that the holidays are fast approaching, I actually need to work on my Christmas dinner menu. *Sigh* What am I going to make? Are we going to get some more renovations done before the holidays? Who knows...time to go searching for more yummy recipe inspirations!

How do you celebrate the holidays? How do you keep calm during the most stressful time of year?

Happy Shopping, Cooking, and keeping calm!! :)

Vegan Gluten-Free Eggplant Lasagna with Romanesco Broccoli topped with Herb and Chives Cheddar Cheese Sauce

Yesterday, my mom gave me a very odd looking vegetable. At least, I think it was a vegetable. Originally, I thought it was a cauliflower, but after much Google searching, I found it is actually a cauliflower called a broccoli, a Romanesco Broccoli. Make sense? Nah, at least not to me. LOL!

Gluten Free Chocolate Crepe with Mascarpone Cheese Filling

Last night I was having a major craving for Crepes. Mmm...crepes! So I did a quick search on my favourite food porn site: Tastespotting. I can look at food pictures forever! Did you know I kindA like food? LOL! Just kinda!

Anyway, this awesome picture came up. A RED crepe. Then I read the "Red Velvet Crepe". OMG YUM! I dreamed about these crepes last night. Of course, I had to make crepes today!  :)

Happy National Sandwich Day!! :)

National Sandwich Day would have be my husband's second favourite unofficial holiday. Second, only to National Grilled Cheese Day. My husband loves his sandwiches so much, I decided to create two sandwiches for this wonderful occasion. :)

For my first sandwich, I combined two of his favourite meals, Grill Cheese Sandwich and Lasagna. Best part for him was that I used Udi's Gluten-Free bread. I would have used some Daiya Cheese and Yves Veggie Ground, but I didn't have either. (Note to self: stock up on some Daiya and Yves!! ) I just used some ground turkey and regular cheese. This recipe is definitely going to be added to my dinner rotation. So, GOOD!!

"Lasagna" Grilled Cheese with a side of salad

Vegan Mushroom Tacos

As a last minute dinner, I decided to make some simple tacos. At first I was going to use the ground turkey I have sitting in my fridge. Instead, I opted for Vegan tacos, mainly because my wonderful mushrooms were looking like they were on their way out very soon. So Vegan tacos it was! :)

I love tacos, especially because I get to top the tacos with whatever I want. I tell my daughter, it's a la carte. Sounds fancy: Vegan Mushroom Tacos a la carte. LOL!

Kat loves tacos too, but tonight was a fight. She didn't want Vegan tacos. I told her I was going to make it out of ground turkey, last minute I didn't use the meat. She loved the tacos and I didn't have the heart to tell her there was no meat. Oh well, she'll know soon enough, when she reads this blog post. LOL!

Review: Udi's Gluten-Free Bread

Yesterday, I picked up some gluten-free bread, but not just any gluten-free bread, Udi's Gluten-Free Bread. I have seen some other Gluten-Free breads at Whole Foods and other grocery stores, but I found, just by touching the loaf, they seem really dense and dry. So I was holding out for Udi's. Especially because Jax from Gluten-Free Ontario suggested it as well.

Review: Sweets from the Earth

Ok, get a glass of soy or almond milk ready. I picked up some cookies at Melissa's One Stop Gluten-Free Shop. I had never seen cookies made from cashews before, of course I had to pick it up. These were Gluten-Free Vegan Cashew Cookies made by Sweets from the Earth.

Review: Melissa's One Stop Gluten-Free Shop

Today, I made my first trip to Melissa's One Stop Gluten-Free Shop. I have been dying to go since I walked past it some time late May. Yes, it's taken me this long to actually step foot into the store. Every time I take a trip to Downtown Brampton the store is usually closed. If I do get there early, it doesn't open until 11AM. I guess I should pay more attention to their store hours. LOL!

Renovations Complete...

...Well for my blog at least. LOL! I have been trying to find a template that would work for me (and look great) for months now, but nothing has really felt right! But I think this one, I think it's THE one!! Yay!!

Post a comment and tell me what you think of it. I certainly think it's pretty swell!! :)

Gluten-Free Quinoa Southwest Burritos

I think I mentioned before how I love cabbage rolls. For about a week, I have been trying to put together a vegan lentil filling for cabbage rolls but I couldn't concentrate. My mind keep wondering to my favourite Quinoa and Black Bean recipe, so instead of fighting my instincts, I decided to create a different  flavour of cabbage roll, not 100% vegan, but vegetarian. My husband doesn't like cabbage so I put the filling in some tortillas. (I guess, they would be burritos for him.) To make the "burritos" gluten-free, I used cabbage leaves for the rest of the family. Boy was it good!! :)

Vegetarian Breakfast Burrito

I don't always eat the most nutritious breakfast, but today I was determined to make a fabulous breakfast for my husband. He's been working non-stop for weeks. And on his days off, he'd go help out family members with their computer or technology problems.

While on Facebook a few days ago, I notice a post from Diabetic Living: Our Best Breakfast Recipes. I came across two recipes that really peaked my interests: Eggs Benedict and Knife and Fork Breakfast Burrito.

Today, I made Knife and Fork Breakfast Burrito. My husband doesn't really care for Eggs Benedict. I know right? Who doesn't like Eggs Benedict?

A couple of nights ago I finally got my hands on a copy of Forks over Knives. I heard about this documentary a couple of months ago. It was pretty random, I think it was one of the advertisements on Facebook.

Zombies + Food Trucks = Leftovers

When I saw that Chef Michael Smith tweeted about Leftovers, I HAD to check it out.
Let me tell you, there is nothing more I love then Food Trucks and Graphic Novels. (Well, I guess both will have to be after food in general.) . Zombies - not so much. Yes! I'm a fraidycat! LOL! But this makes me want more. I can't wait until Wednesday for the next installment. Wait today is Wednesday...maybe there will be a new one today. Yay!! :)

Happy Reading!! :)

Greek Ribs with Potato Cauliflower Mash

My sister-in-law has been raving about Greek Ribs and Cauliflower Mash! I just haven't had the time to throw it together. This week, I made a meal plan which included them. Yes, I made another meal plan. I'm actually enjoying it a lot more then I use to, go figure! LOL!

Pumpkin Caramel Apple French Toast

While on Twitter, I heard of this cute little French Toast Challenge. I happen to LOVE French Toast, actually I love anything to do with breakfast or brunch! This is also my favourite time of year. So why not make a totally yummy French Toast recipe around that. Ever since I saw this challenge, I knew what I was going to make: Pumpkin Caramel Apple French Toast topped off with some Pumpkin Syrup. I was totally drooling at the thought.

Of course I had to challenge myself a little further. I decided to make the syrup and caramel sauce with Coconut Palm Sugar instead of regular sugar, way better for those watching blood sugar. And OH MY GOD! It was so good!!

Meal Plan - October 10-14

As you all know, I really hate to meal plan, but this week was a different story. I actually enjoyed it. Weird..I guess there is a first time for everything. :)

Last weekend was our Canadian Thanksgiving. I love holidays, I just hate all the stress involved in the holiday. This year was pretty laid back, thank goodness!! So Monday was a holiday and we just had some leftovers for dinner. Yay! A simple meal for once. :)

Tuesday was turkey Tuesday. Although, we just had turkey on Saturday, I had some ground turkey in my fridge and I had to use it or it was going to be tossed in the trash. I HATE throwing out food. HATE IT!! So I started looking up some recipes, and stumbled upon this great one, Cranberry Turkey Meatballs. They were making my mouth water at just the thought of them. I did make some changes, but boy were they ever good!!

Thanksgiving Meatballs served with
mashed potatoes and Swiss chard topped with some yummy gravy.
(Mashed potatoes, Swiss chard and gravy were
left overs from Thanksgiving.)
Wednesday was another leftover day. This time it was left over butternut squash ravioli filling and roasted chicken. I'm not a big fan of leftovers, but my meals are getting better, so my leftovers are getting better too. I guess I should have thought of that way sooner. LOL!

10 October 2011

Zucchini Apple Pecan Cake

I love zucchinis! They're so yummy! I bake it, roast it, bbq it, stir fry it, and bread it, so I always have lots in my fridge. Since, it's apple season, I have tons in my fridge too. I don't usually have nuts kicking around in my house, but I did make pralines recently. I was craving zucchini cake (or bread) but wanted to change it up a little. I have been working on this recipe for a little while now. I have tried making a vegan, sugar and gluten free version, but haven't had much luck. However, when I used all-purpose flour and sugar, it was great! :)

Meal Planning

Although I love to cook, I really hate meal planning. I really REALLY hate meal planning.

Problem is: Not only do I love to cook, I love to eat! I only like to cook what I want to eat. So there is no planning around that. Plus, I cater around my kids and husband too much. Plus, near the end of the week I have to start planning my meals around what is going bad first. So many factors. :(

At least, I know what they like to eat. They have pretty simple tastes. At the same time, Kat's favourite food is sushi. Alyssa and Logan  both love Vietnamese food, especially vermicelli. Garrett loves his comfort food. This is actually his favourite season.

Garrett loves the fall and winter months because he loves Chili, Sheppard's Pie, Beef Stew, etc. You know, all the stuff mom (well, not my mom, seeing that I'm Asian) use to make to warm up the house. I know my mother-in-law did at least. She used to make lots of stews and other hearty meals in the winter. My favourite one she makes is her Lazy Man's Cabbage Rolls (basically cabbage rolls, just not nicely wrapped up). Funny thing, it is my husband's least favourite of his mom's stews. He doesn't like anything that has cabbage as a main ingredient. Needless to say, I never make this at home.

02 October 2011

Butter Chicken

I love LOVE Butter Chicken! It is my favourite Indian dish. I really enjoy Indian food, however it is was the only cuisine that gave me grief in my own kitchen. I can make pretty okay curries. I have never made a successful Butter Chicken recipe at home. Most of the time, I finish the recipe and we end having pizza or a really quick pasta. Yes, it ends up that bad! Not this time!

01 October 2011

Squash Day

Today was my ode to squash day. :)

On the menu today was Pumpkin Syrup, Homemade Butternut Ravioli with Sage Brown Butter Sauce, and Chocolate Pumpkin Spice Latte Cupcakes topped with Cream Cheese Buttercream, Pumpkin Syrup and Cinnamon. It was a pretty aggressive cooking day for me, especially making homemade ravioli.

The Pumpkin Syrup took longer then expected, so I was a little discouraged. (We didn't get to eat it over our pancakes.) But I sucked it up and on with the next recipe, homemade ravioli. I have been looking forward to this dish for a while. Making the pasta was pretty simple, a little time consuming, but worth the time and effort. I love fresh pasta, but always thought it was too complicated to make it at home. I decided to do the "easy" method and use my food processor. Never again! It wasn't any easier. I still had to kneed the dough, so not much time saving. Here's a YouTube video I found, which made pasta making not so scary. But here's my finished product. :)

Spaghetti Squash with tomato "meat" sauce

I just finished my dinner. I could not wait to write this post. I have been meaning to make this for a couple of weeks now, but haven't had a chance. However, I was determined to make it this week. (I think I can, I think I can!)

Well, let me tell you how yummy it was. So so...yummy! Alyssa and Logan really enjoyed it. Kat, not so much. She didn't really like the texture of the noodles. Whoever said that Spaghetti Squash tastes just like regular pasta, LIED!! The texture was like tender crisp green beans, so there was still a crunch to the "noodles". I didn't mind it, neither did the little kids. Logan had two bowls of it. :)

Spaghetti squash after I roasted it in the oven and
scrapped the flesh.

Update - Quinoa Veggie "Meatballs"

I was so obsessed with my "meatballs" I couldn't sleep the other night. So guess what we had for lunch on Tuesday? Yep, that's right, VEGAN Quinoa Veggie "Meatballs". They were so good. Kat wasn't such a fan, she said she missed the meat, but Alyssa and Logan both enjoyed it. :)

I double my recipe and omitted the egg and used 1/4 cup rice flour. Yum! I didn't even notice the difference, but it did make 33 "meatballs" more then double what I had the night before. Oh well, more yummy-ness for tomorrow. :)

My little "meatballs" before heading into the oven.
