Breakfast Time!

I was recently asked what is my favourite easy breakfast. I would have to say my Breakfast Cups. Simple and delicious..


I usually make these for brunch on Sunday, but make a ton of them. Whatever is left over, I throw them in the fridge for a quick breakfast on the go. Just pop them in the microwave for a minute or two and you have yourself a yummy and satisfying breakfast or snack. My kids love them too.

Breakfast Cups

Ingredients:
6 slices of stale bread
6 eggs
1 cup milk
1 tbsp chives, chopped
Salt and pepper
1 cup cooked bacon or cooked ham
1 cup cheese

Directions:
  1. Preheat oven to 350 F. Grease a 12-muffin pan, set aside.
  2. Cut 12 circles from the bread slices. I used a biscuit cutter.
  3. In a bowl, beat 6 eggs, milk, chives, salt and pepper. Dip each bread circle in egg mixture and place in the bottom of each muffin hole, and top with some bacon. Pour remaining egg mixture into each muffin hole, then top with cheese.
  4. Bake in preheated oven for 40 minutes, or until breakfast cups are cooked and tops are lightly brown. Serve hot or room temperature.

Help I need better lighting!!



I haven't really been taking pictures of my yummy food or posting any recipe lately. I know it's really sad for me too. I bought a new fancy camera just be for Christmas and it takes some awesome pictures, but since it gets dark around 4:30 pm right now. My pictures still look like crap, due to my kitchen's horrible lighting. *sigh*

I think I may have to actually invest in a light box. Oh, and maybe some photography lessons for my bad composition. I guess I can't blame that one lighting.  LOL!!

A little to steep for a simple hobby.
Although, I did find an awesome link, which shows how to make a light box for under $50 bucks. Awesome right!!

I hope to make one soon, then maybe I'll get out of this photography funk. :(

New Hobby :)

Over the past few months have picked up a new obsession hobby. I have been looking for one for a little while now, but I think this is it. I have been making slippers galore.

 











I have moved on to adult and baby hats, oh and baby mittens. Although, I don't have any babies in my household, I have decided to make as many baby hats and mittens to donate to my local hospital. I am actually really excited for this new venture. I have always told my husband I wanted to change the world, but never really knew how. I think this is my opportunity. :)



I think I have also found a new New Year's Resolution. :)

I wonder how many I can donate in a year. Hmm...

Back to School

Well, today is the first day back to school for my kids. Finally, back to some normalcy. I love my kids, but I think they love being out and about more.

I really need a more up-to-date picture of my kids. LOL!
Alyssa is a huge social butterfly. We did have a couple of play dates with her friend Claire. Thank goodness, a few hours where they can entertain each other. Alyssa and Logan play well together for the most part, but on occasion Alyssa has her queen complex and bosses him around. He doesn't play so well with her when she is in that mood. That's when every two minutes, it's: "Mommy, Logan hit me," or "Mommy, Alyssa is not sharing," or "Mommy, Logan is eating my hair." Yep, you read right!!

Kat is in her own teenage world, sometimes I'm VERY thankful of that, so she usually just hides in her room.

Alyssa and Kat are very excited for school today, as am I.

Yeah, Mommy time! Well, kinda. Having only one child seems like a huge break for me right now. LOL! The little things that make mommies happy, who knew. :)
