Breakfast Time!

I was recently asked what is my favourite easy breakfast. I would have to say my Breakfast Cups. Simple and delicious..


I usually make these for brunch on Sunday, but make a ton of them. Whatever is left over, I throw them in the fridge for a quick breakfast on the go. Just pop them in the microwave for a minute or two and you have yourself a yummy and satisfying breakfast or snack. My kids love them too.

Breakfast Cups

Ingredients:
6 slices of stale bread
6 eggs
1 cup milk
1 tbsp chives, chopped
Salt and pepper
1 cup cooked bacon or cooked ham
1 cup cheese

Directions:
  1. Preheat oven to 350 F. Grease a 12-muffin pan, set aside.
  2. Cut 12 circles from the bread slices. I used a biscuit cutter.
  3. In a bowl, beat 6 eggs, milk, chives, salt and pepper. Dip each bread circle in egg mixture and place in the bottom of each muffin hole, and top with some bacon. Pour remaining egg mixture into each muffin hole, then top with cheese.
  4. Bake in preheated oven for 40 minutes, or until breakfast cups are cooked and tops are lightly brown. Serve hot or room temperature.

Eggs Benedict

I have been craving a good Eggs Benedict for days now, but last time I made Eggs Benedict it was a disaster. I think I was trying to make breakfast for too many people (6) all at the same time. The eggs were cold, the Hollandaise sauce was lumpy and the toast go rock hard. Just thinking about it gives me the chills. :S

A couple of weeks ago, I found an easy Blender Hollandaise sauce. It's not traditional, but boy was it easy and  super yummy! With this sauce, I can make Hollandaise sauce everyday. Not that I would, very high in cholestrol, but I could. :)

Vegetarian Breakfast Burrito

I don't always eat the most nutritious breakfast, but today I was determined to make a fabulous breakfast for my husband. He's been working non-stop for weeks. And on his days off, he'd go help out family members with their computer or technology problems.

While on Facebook a few days ago, I notice a post from Diabetic Living: Our Best Breakfast Recipes. I came across two recipes that really peaked my interests: Eggs Benedict and Knife and Fork Breakfast Burrito.

Today, I made Knife and Fork Breakfast Burrito. My husband doesn't really care for Eggs Benedict. I know right? Who doesn't like Eggs Benedict?
