I usually make these for brunch on Sunday, but make a ton of them. Whatever is left over, I throw them in the fridge for a quick breakfast on the go. Just pop them in the microwave for a minute or two and you have yourself a yummy and satisfying breakfast or snack. My kids love them too.
6 slices of stale bread
1 cup milk
1 tbsp chives, chopped
Salt and pepper
1 cup cooked bacon or cooked ham
1 cup cheese
- Preheat oven to 350 F. Grease a 12-muffin pan, set aside.
- Cut 12 circles from the bread slices. I used a biscuit cutter.
- In a bowl, beat 6 eggs, milk, chives, salt and pepper. Dip each bread circle in egg mixture and place in the bottom of each muffin hole, and top with some bacon. Pour remaining egg mixture into each muffin hole, then top with cheese.
- Bake in preheated oven for 40 minutes, or until breakfast cups are cooked and tops are lightly brown. Serve hot or room temperature.
