Mexicali Sliders

Tonight's dinner was Chloe Coscarelli's Mexicali Sliders. I made these a couple of weeks ago, but only made the patties. Tonight, I actually made the Sliders with the Spicy Mango Sauce too. It was amazing. Adding the Mango Sauce added another level of YUM to these Sliders!


I added about 1 tbsp of hot banana peppers to the Mango Sauce to spice it up a little, and wow! What a difference.

Spicy Mango Sauce
Ingredients:
1 mango, peeled and cut
1 tbsp jarred banana peppers
1 garlic clove
1 tablespoon white or apple cider vinegar
1/8 teaspoon sea salt

Directions: 
Place all ingredients into a blender and pulse until almost smooth. I prefer it a little chunky. :)

This was a huge hit with everyone, even my picky Kat. This recipe will definitely be added to my regular meal rotation, especially because it is a pretty easy meal to throw together. Thank again Chloe for your amazing vegan recipes!! :)

Oh, BTW, Chloe has a cookbook coming out in March, but you can pre-order your copy already. The pre-order is already on my Christmas List. Hopefully, Santa will have me on his Nice list. ;)
